The signature service is live action saffron rice cooking in giant traditional Spanish pans, prepared on site by a classically trained chef with twenty five plus years of Bay Area culinary experience, learned directly from a Spanish master chef whose family recipes trace generations.
The cooking experience is the centerpiece of the event. Two giant traditional Spanish pans set up at the buffet station, simmering with house made saffron stock, the freshest seafood and chicken layered in front of guests, fragrant smoke and the unmistakable visual of saffron yellow rice forming in real window. This is interactive food theater that doubles as the cocktail hour entertainment, especially for weddings and brand activations where guests gather around to watch the chef finish the rice and serve directly from the pan.
The menu includes two saffron rice options at the buffet, typically a Valenciana style with chicken and chorizo plus a vegetarian or seafood option, served with five to seven hand made tapas accents including padrón peppers, jamón serrano with melon, patatas bravas, gazpacho shooters, escalibada, and ceviche shooters. A house made sangría service rounds out the meal, with three sangría varieties poured from glass pitchers by the server team.

The vendor brings everything required including the giant pans, propane for cooking, all serving ware and utensils, all linens, table runners, glassware, and the staffing team. No electricity needed, no kitchen access needed, allowing the vendor to serve venues that other caterers cannot reach: outdoor wineries, ranches, vineyards, barns, private estates, rooftop venues, and remote California coastal sites.
Cuisine focus: authentic Spanish cuisine with influences from Mediterranean and Latin American culinary traditions. Eight saffron rice varieties available at consultation including Valenciana style, Mariscos seafood style, Mixta combination style, Vegetariana style, and chef seasonal variations. Fifteen plus tapas options available including Champiñones al Ajillo, Champiñones con Chorizo, Espárragos a La Plancha, Jamón Serrano con Melon, Padrón Peppers, Patatas Bravas, Escalibada, Gazpacho shooters, Queso Español, Datiles Endiablados, Datiles con Manchego, Ceviche shooters, Pan con Tomate, Albondigas, Chorizo Español, and Solomio.
Dietary accommodations: all saffron rice varieties are naturally gluten free, no gluten in the rice base. Vegetarian and vegan options available including a dedicated vegetarian rice variety plus tapas selections. Nut free and dairy free accommodations made on request during the consultation. Kids under ten are served at no charge as a vendor courtesy.

The vendor travels with a fully self contained mobile cooking station and serves venues that other caterers cannot reach because no electricity or kitchen is required.
